Dubrovnik, Croatia is one of my favorite places! After Tresteno, which is about 20 minutes drive from Dubrovnik. There is a really beautiful and one of the oldest Arboretums there with fountains and statues. A must see! There are lots of little towns nearby as well.

We were stationed in Vicenza, Italy for about three years and traveled our booties off! We moved back to the US about a year and a half ago and boy do we miss it. I would recommend Budapest and Poland. You could drive, but I'm guessing it would take a day or 2 to get there. We flew to Budapest on Wizz Air. Not sure if that airline operates out of Germany, but it was cheap. We made the very long drive to Poland and our son was just 5 weeks old at the time.

Def recommend the Glacier Express thru Switzerland, might be worth driving to Zurich and taking the train to Zermatt to catch the Express, we also loved Interlaken. Budapest is a must too. Have you traveled by train much? We found that super easy to do, and depending on the route and time of year you'd probably have plenty of space.

BTW, love the carmen sandiego reference ;) I used it have the game for my computer on a floppy disk! (I'm sure our kids, heck maybe even our younger siblings wouldn't know what a floppy disk is, sad.)
